Pineapple Coconut Curry

Who's ready to cook up some good eats? For this recipe we are making a pineapple coconut curry. This is a super simple curry to make, and can be made with or without chicken to you likening. In this video we also show you how we make our rice in the pressure cooker🧑‍🍳

Ingredients:

- 1 can coconut milk

- 1 onion

- 1 bell pepper

- 1 heirloom tomato

- ½ pineapple

- 1 pound chicken

- 1 cup dry rice

- 3 tbsp turmeric

- 10 cloves of garlic

- 4 tsp cumin

- 3/4 tsp cayenne

- 3 tsp paprika

- salt

- black pepper

- avocado oil


Instructions:


Rice

-Add 1 cup of washed rice, 1.25 cups water, two minced cloves of garlic, 1 tsp cumin, 1 tsp turmeric, salt, pepper, and a dash of oil to your pressure cooker

- Pressure cook on high for 3 minutes and let it sit for another 10 minutes

- Release the pressure, pop the lid off, give it a stir, and put the lid back on


Curry

- Chop the onion and the bell pepper. Heat up avocado oil in the pan over medium heat and once the oil is hot, throw them in. Cook for 4-6 minutes

- While the onion and bell pepper are cooking, mince 8 cloves of garlic, cut up ½ of a pineapple into cubes, dice 1 tomato. Once all the cloves are minced, go ahead and toss them in with the onion and bell pepper

- Mix in 1 tsp Turmeric, 1 tsp cumin, 1 tsp paprika, 1/4 tsp cayenne, salt, and pepper into the veggies

- Add the can of coconut milk and pineapple into the pan, as well as 2 tbsp turmeric, 1 tsp cumin, 1 tsp paprika, 1/4 tsp cayenne, salt, and pepper

- Bring to a boil and turn it down to simmer. After about 10-15 minutes add the tomato. Another 15 minutes and your curry is done!


Chicken

- Cut a pound of chicken into cubes and add them to a separate pan preheated with hot oil or butter

- Season the chicken the same way as the veggies

Cook for around 10-15 minutes and serve on top!
