Whether you're a seasoned chef or a kitchen newbie, this recipe is sure to become a favorite in your meal rotation. So grab your apron and join us in cooking up some comfort.
Ingredients:
- 1lb potatoes
- 1 cup AP flour (plus extra for rolling/surface)
- 1 egg
- salt & pepper
- olive oil
First, bring a pot of salted water to a boil and boil the potatoes until soft. The water should cover the potatoes about 1-2 inches.
Once the potatoes have cooled down a bit, peel them with your hands. Finely mash the potatoes, then spread them out on a flat surface into a big patty with a small indent in the middle for the egg.
Evenly distribute the flour over the potatoes. Crack an egg into the middle and add salt on top.
Start the dough by using a fork to slowly mix the outer parts into the middle where the egg is. Once the mixture begins to get doughy, use your hands and start to knead the dough.
Now that the dough has been kneaded, divide it into 4 equal parts. Roll each part into a long strip, you may need to use more flour here to prevent the dough from sticking.
Don't forget to get another pot of heavily salted boiling water ready to cook the gnocci.
Cut the gnocci into small pieces, about 1 inch in size, and spread them out on a tray with parchment paper. You can choose to form the gnocci here with a fork or gnocci paddle, but we decided to keep it simple.
Drop the pieces of dough into the boiling water, we chose to do ours in two batches. Make sure to keep stirring so that the pieces do not stick together.
Simultaneously, preheat olive oil in a pan with freshly cracked pepper.
After around 2 minutes, the gnocci will start to float, that is when it is done cooking. Remove the finished pieces from the boiling water. Once an entire batch is done, toss it in the pan with the oil and pepper. Fry until your desired doneness.
We chose to serve this with our delicious marinara sauce and a garnish of oregano. Enjoy!
