Ingredients:

- 4 chicken thighs

- 4 red apples

- 1lbs potato

- 1 onion

- rosemary

- salt

- pepper

- onion peel salt

- olive oil

First, get out the apples, potatoes, rosemary and onion. Pre-heat your oven to 400⁰ F.

Cut the onion into half rings, thinly slice the apples and potatoes, and finely chop up about a tablespoon of rosemary.

Pre-heat a pan with 2 tablespoons of butter and sauté for about 10 minutes.

Once the onions are done cooking, layer the apples, potatoes, and onion in an oven safe dish. Cover with The Simple Staple's onion peel salt.

Toss the chicken thighs in oil, onion peel salt, pepper, and the chopped rosemary. Lay the thighs across a wire rack such that they can be positioned above the apples and potatoes.

Roast in the oven for about 55 minutes, or until the chicken reaches 165⁰ F internal temperature. Serve and enjoy!
