Stuffed Bell Peppers Recipe

With vibrant colors and mouthwatering flavors, these stuffed peppers are perfect for a quick and satisfying meal. See how you can create this delightful dish with minimal effort and maximum taste!


Ingredients (per batch):

- 3 bell peppers

- 1 yellow onion

- 4 cloves of garlic

- 1 (8oz) can of tomato sauce

- 1/2 cup uncooked long grain rice

- 3/4 cup broth of choice

- 1 tsp paprika (plus more for garnish)

- 1 tsp oregano

- 1/2 tsp cumin

- salt & pepper

- avocado oil


First, preheat the oven to 350⁰F. Remove the stems from the bell peppers then cut them in half. Toss them in oil, salt, and pepper, and place in the oven in a baking dish for 20 minutes. When these are done, take them out of the oven and set them aside, the oven can stay on for its next use.


Next, dice the onion and mince the garlic. Preheat oil in a cooking pot and once that's hot drop in the onion, garlic, and some salt. Make sure the temp is not too high here as to not burn the garlic.


Once the onions have cooked down for around 4 minutes, add the rice, tomato sauce, broth, and seasonings. Mix it all together, bring the mixture to a boil, reduce the heat to simmer, and cover with a lid. This will cook down for around 20 minutes before turning off the heat and letting it rest for another 5 minutes.


Now that the stuffing is ready, stuff your bell peppers! You can stuff them to your liking, but as long as the peppers are a good size the recipe should use all the stuffing. Garnish with paprika, cover with foil, and place them back in the oven for another 15 minutes.


After those 15 minutes are up, set the oven temp to a high broil, remove the foil, and let the stuffed peppers broil for 4-5 minutes. Take the finish product out of the oven and enjoy!
