Tomato and Tofu Salad

Time for some more good eats! We're cheffing up a fresh Tomato and Tofu Salad today, a light and refreshing meal perfect for kicking off a sunny spring day🧑‍🍳☀️. You can use whatever dressing you like, but we'll be using our Homemade Garlic Salad Dressing, so stick around for the next video where we show you how to make it.


This salad combines a multitude of textures and flavors to create an explosion in your mouth. Be careful making this, it may turn into an every weekend thing😉.


Start with a cutting board and knife. Get out fresh ginger, two tomatoes, two jalapeĂąos, and a block of tofu.


Dice the tomato, thinly slice the jalapeĂąo, and cut about a tablespoon of the ginger into small pieces.


Take the tofu out of the package and dry it for 5 minutes using a towel and a weight. Cut the tofu into small cubes and place in a bowl. Coat the tofu with 1/2 cup avocado oil, salt, pepper, and 1/4 tsp cayenne then mix.


Set your air fryer to 30 minutes at 400⁰ F and preheat for 5 minutes before dropping in your tofu.


Take out a salad bowl, arugula, and home made garlic salad dressing, which we will make in our next video.


Place arugula into the bowl and scatter you tomato, jalapeĂąo, and ginger over it. Grab some fresh basil and break some off onto the salad and finish off with your desired amount of dressing.


Finally, place the cooked tofu on the salad, salt and pepper to taste and serve.


If you wish to make this recipe non-vegan, simply replace the tofu with chicken and adjust the cooking time as necessary.
